Génoise
is named after its place of origin, Genoa, Italy and is
a type of light sponge cake. At Hafner, we use
only the freshest flour (not blanched nor bromated
flour), water, sugar, eggs and special ingredients so that our génoise
is much lighter, has more flavor and is more tender then
a regular sponge cake.
Our génoise
are created using a state of the art process that's
second to none!
The
result is a firm and yet pliable sheet of génoise which
can even be used for Yule logs. Our sheets don't
break down with moisture, which makes them ideal for
opera cakes or any cake you want to prepare a long time
in advance.
